MAMA CARRIES

Ingredients :

300 g butter
400 g flour (I took out 1/4 cup)
130 g cornflour
100 g icing sugar
1/2 teaspoon vanilla essence

Topping :

1/2 egg white ~ beat till fluffy
90 g icing sugar
1 tablespoon cornflour

To scribble :

Scoop a bit of the topping above and mix with cocoa powder or you can also use chocolate emulco

Method :

1. Sift flour and cornflour. Set aside.
2. Beat butter and icing sugar till well combined. Add in vanilla essence.
3. Add in flour, bit by bit till soft dough is formed.
4. Roll dough 1/2 cm thick and cut using a heart shape cookie cutter. Arrange on a tray.
5. Using your finger, spread the topping on top of each cookie.
6. Use a clean toothpick and dip into the cocoa mixture and scribble on top of the white spread.
7. Bake in a pre-heated oven at 150 C. Just use the bottom heat to ensure the top doesn't browned that much. Bake for about 15 to 20 minutes.

What I did...

1. I used margarine.
2. There's a lot of balance for the topping. I normally use 3/4 recipe for the topping, and that should do it.
3. For the cocoa mixture, I added a few drops of brown coloring to give it a darker color. If only I have chocolate emulco....hmmm.....

LEMON CHEESE CUPCAKES

Cheese Cupcake with chocolate toppings
Cream cheese cupcake
Makes 12 cups

Ingredients:
130g cake flour
½ tsp baking soda
½ tsp baking powder
125g cream cheese, at room temperature
135g butter, at room temperature
145g castor sugar
1 tsp grated lemon rind
2 nos. medium (Grade B) eggs, at room temperature
1 tbsp lemon juice

Lemon glaze:
40g icing sugar, sifted
1 tbsp lemon juice
12 large paper cups

Method:
1. Line muffin pan with paper cups.
2. Sift cake flour, baking soda and baking powder into a mixing bowl. Set aside.
3. Cream butter and cream cheese until light and creamy for 8-10 minutes.
4. Add castor sugar and continue to mix until light and fluffy.
5. Beat in eggs, one at a time. Stir in lemon rind and lemon juice.
6. Finally, fold in sifted flour in (1).
7. Divide batter evenly into paper cups. Bake in preheated oven at 200 degC for 40 minutes (Note 1).
8. Remove the pan from the oven. Rest for 10 minutes before removing the cupcakes from the pan (Note 2). Cool on wire rack. (Note 3)
9. Meanwhile, prepare lemon glaze. Heat lemon juice in microwave on high for 15 seconds. Pour into sifted icing sugar and whisk till smooth.
10. Fill lemon glaze into a piping bag and use a writing nozzle to pipe the glaze onto cupcakes. Decorate with lemon zest and other decoration of your choice. Chill before serving.

Notes:
I was using gas oven which required 40 minutes baking time at 200 degC. For conventional or convection oven, please reduce temperature by 20-25 degC and baking time should be adjusted to 20-30 minutes in total.

The cakes are too soft to be moved yet.
The cheese cupcakes are expected to shrink a little after cooling.

[color=red]BLUEBERRY CHEESE TART[/color]

 
SWEET PASTRY

*Berat pastri yang terhasil lebih kurang 780 g.

Bahan A

200 g mentega
100 g gula aising
1/4 sudu teh esen vanilla

Bahan B
1 biji telur

Bahan C
420 g tepung
1 sudu besar tepung susu

Cara-cara
1. Putar (A) hingga lembut dan tambahkan (B). Putar lagi hingga gebu.
2. Masukkan (C) dan gaul sehingga sempurna.
* Tat akan bewarna keemasan dan rangup jika dibakar di rak bawah ketuhar (lebih kurang 1/2 inci dari bahagian bawah ketuhar.

BLUEBERRY CHEESE TARTS
Bahan-bahan
300 g Sweet Pastry

Filling
Bahan A
250 g cream cheese
50 g gula
25 g mentega

Bahan B
1 biji telur
Bahan C
25 g whipping kream

Bahan D
20 g tepung

Blueberry filling

Cara-cara
1. Tekankan pastri manis ke dalam acuan tat. Tusukkan lubang di kulit pastri dan bakar pada suhu 190 darjah Celcius selama 15 minit atau sehingga kuning perang. Ketepikan.
2. Inti : Pukul (A) sehingga licin dan gebu. Masukkan (B) dan pukul hingga sebati. Tambahkan (C) dan sebatikan hingga sempurna. Campurkan (D) dan ratakan dengan sempurna.
3. Tuangkan inti keju ke dalam kulit pastri yang telah dibakar tadi. Bubuhkan sedikit jem beri biru di permukaan atas dan bentukkan corak olakan.
4. Bakar pada suhu 200 darjah Celcius selama 10-12 minit.

Nota :-
* Jika inti keju dibakar terlalu lama, permukaannya akan menjadi retak.
* Untuk menjadikan permukaan atas tat lebih menarik, sapukan apricot glaze supaya ia kelihatan berkilat. (Apricot glaze + sedikit air dan panaskan di atas dalam periuk kecil di atas dapur hingga campuran tersebut cair)
* Strain (tapis) blueberry filling tersebut supaya filling tersebut dapat keluar dengan lancar sekiranya menggunakan piping bag ketika menghias. (Ini terkena batang hidung sendiri hari tu, bila nak pipe buat bentuk spider web tak jadi sebab tersumbat-sumbat dan berbiji-biji)

TIRAMISU

 
 
40-50 savoiardi biscuit/ladies fingers/sponge fingers


A/Cream

250gm mascarpone cheese atau philadelphia cheese
250gm whip cream
100gm sugar
1tsp vanilla
1-2Tb cocoa powder atau coffee powder/Nescafe



B/Cocoa Syrup/Coffee Syrup
200ml air
100ml fresh/ UHT milk
2Tb cocoa powder atau Nescafe atau mix
1tsp vanilla

Cocoa powder-for dusting atas

Cara Membuatnya

1. Pukul cheese dan 50gm gula sampai gebu, tepikan.
2. Pukul whip cream dan 50gm gula sampai gebu, campurkan dgn cheese, gaul dgn senduk, masukkan vanilla dan cocoa powder atau Nescafe. Gaul just until combine cukup.
3. Sementara nak sediakan syrup bolehlah chillkan kejap campuran tadi.
4. Campurkan semua bahan syrup.
5. Penyediaannya. Sediakan tin (loose base better) 8 X 8 atau 9 x 9. Spray tin dgn non stick spray. Mula2 celupkan fingers dalam syrup dan susun dalam tin.
6. Ayak cocoa skit kat atas fingers tu. Bubuh separuh dari cream mixture tadi. Ulang dgn fingers, cocoa powder dan cream mixture di atas. Ayak banyak cocoa powder sampai cover atas.
7. Tutup dgn cling wrap, kemudian foil dan simpan dalam freezer dalam 1 jam, keluarkan dan chill overnight.

Nota :

-Exact size tin tu tak sure pasal tiap kali buat mesti tukar2 guna tin, macam haritu buat dua resepi, satu guna 9 x 9 dan satu lagi guna square foil tin, yang pastinya make sure dua layer tiramisu tu dan kalau ada lebih letaklah dalam dessert cup ke atau apa2 bekas=85

Strawberry Cake

Strawberry Cakes/ cup cakes
Collection dari kengkawan...

Bahan-bahan
240 g mentega
10 g Quick 75 atau ovalette
200 g gula kastor
Secubit garam
4 biji telur
290 g tepung naik sendiri, diayak
dgn 60 ml susu manis)
1 camt strawberry paste
1 camt pewarna pink rose

Cara Membuatnya

Putar mentega dan ovalette hingga kembang.
Masukkan gula dan garam, putar hingga gebu.
Letak sebiji demi sebiji telur dan putar sebati.
Kemudian masukkan pula tepung, kacau rata-rata.
Akhir sekali, tuangkan stoberi pes & kaler yg dipilih).
Ratakan adunan di dalam tin 22 cm yg dialas dengan kertas kalis minyak dan dilengser dengan mentega. Bakar pada 190 C selama 1 jam atau hingga masak.

Butter Cream
1 cawan Butter
1 cawan krimwell
3 sudu susu cair
4 cawan gula icing - diayak (boleh kurangkan kalau x suka manis)
1 sudu teh perasa vanilla

Cara Membuatnya
campur semua sekali kecuali gula & putar sampai gebu. Kemudian curah gula ke dalam mixer & biarkan at slow speed sampai lagi gebu.
